is there, like, an adult equivalent of a high school shop class? my school didn't have one and I increasingly feel like it's a big gap in my education

If there's a makerspace near you, they are very likely to have introductory classes for using the various tools, and enthusiast groups who want to talk about their latest projects and the approaches they're taking.

Other than that, at community colleges you can take courses welding, or auto repair, or whatever. It costs some money, but usually it's pretty reasonable. For me the time commitment has always been the bigger obstacle.
